Soba Noodle Salad

A perfect make-ahead dinner for when we pull up somewhere and it’s already dark, or we don’t feel like cooking.

Ingredients

1 Pack of soba noodles (except I didn’t have any last time and I used udon. Perfectly delicious)

Green beans and or asparagus

Neutral oil - 1 Tablespoon

Sesame oil - 2 Tablespoons

Maple syrup - 2 Tablespoons

Light soy sauce - 2 Tablespoons

Sesame seeds - as many as your heart desires

Coriander - a good handful if you’ve got it. Not a necessity but certainly my preference. Same goes for some chopped up cucumber.

Method

Cook noods according to packet instructions

Either blanch or lightly fry beans and asparagus

Mix up your oils, soy sauce and maple syrup

Now pop it all together, give it a good mix and top with sesame seeds, coriander and cucumber

If you’re not finding the dressing saucy enough, then just add a bit more of each ingredient in equal parts. This, as per all my favourite things to make, is entirely customisable and up to your whims and tastebuds.
