Chickpea Smash

We always have a batch of this on the go. Have it in a salad sandwich, add it to a Buddha bowl, spread it on crackers. Whatever floats your boat.

Ingredients

A few stalks of Celery 

1/4 of a Red onion

Can of chickpeas 

Good handful of dill

A tablespoon or two of vegan mayo

Optional - a couple of pickles

Method

I have one of those handy blitzing thingos where you pull the string and it chops everything into tiny pieces. It was $7 from Kmart and one of the handiest things I own. But of ocurse you can just mash the chickpeas and chop everything else finely. Sometimes I like to add a little pickle brine to the mix too. Just follow your heart.

Just throw it all in and then add salt and pepper to taste. Once it’s all minced, have it on a sandwich, add it to a Buddha bowl, spread it on crackers or just eat it by the spoonful. Whatever floats your boat.

Teddy loves it so much, and I’m thrilled about it because it’s packed with protein and other good things.
